A Few Bags of Cookies

My brother Mark headed back to Portland yesterday to fly home to the San Francisco Bay Area. I sent him home with some of these super yummy S'Mores Cookies that he loves.

If you've never made these, you've just gotta give them a try. Here's the recipe:




S'Mores Cookies (as in: please give me some more!)

1-1/2 cups butter softened
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp real vanilla
2-1/2 cups flour
2 cups graham cracker crumbs
1 tsp salt
1 tsp baking soda
2 - 3 cups semisweet chocolate chips (depending on how chocolatey you want them)
1 Large Hershey Bar or 3 regular size bars
about 1-1/2 cups small marshmallows

Preheat over to 350 degrees.

Cream your butter and sugar together in a stand mixer. Add eggs one at a time and blend. Add vanilla and blend until smooth.
Combine flour, graham cracker crumbs, salt and baking soda in a separate bowl and mix together.
Slowly add the dry ingredients to the butter/sugar mixture. Once blended (it will be a thick dough), stir in chocolate chips.

Drop cookies by rounded tablespoons onto a cookie sheet (I always use my silpat so there is no sticking). Bake them for 8 minutes. Remove the cookies from the oven and press in a couple small pieces of the Hershey bar (broken up) and three marshmallows.

Put the cookies back in the over for 4-5 minutes. Let cool on the cookie sheet for about 8-10 minutes before transferring them to the cooling rack.



It was so much fun having my brother here for the first time. We had a wonderful visit with lots of time to just relax and talk.
